4 Easy, Healthy Snack Go-To’s (Daddy, Grandma, and Kid approved)

When I attempted a refined-sugar free February this year, I had to make a snack attack plan or I knew I’d be wanting all the munchy things. I succeeded with my goals for the most part in February, (aka chocloate and candy month) but I didn’t take it to extremes (like not using the sausage because it had a little corn-suryp in it… who puts that in sausage anyway?!) and I still made sugar cookies for Valentines Day. I guess that’s why we set goals, and not state vows… right?

Alright! So  these are some of our go to snacks… I’ve been wanting to share them for awhile. 1, so that I could reference back to them quickly since we make them on a regular basis… and 2 because some of you might enjoy making them at your house on a regular basis as well! These snacks got me through February when it came to snacking, and needing that in-between something to make it to the next big meal. They also get me through every other month or week I’m trying my best to be intentional about what I’m intaking… These recipes are the original, or adapted slightly to our liking- from recipes I’ve found via pinterest… All the original links to the recipes are provided 🙂 So PIN this post to save them ALL, or go PIN your favorite ones! ❤

Lara Bars 
12-15 Dates
2 TBSP Hot Water (to soften the dates)
1/2 C Almonds
1/2 C Cashews
3/4 C unsweetened, Shredded Coconut (my favorite is from our local Health foods store)
2 TBSP of Coconut oil
Mix all ingredients in a food processor/blender and then press into a little pan/ glass container. I love using my Pyrex glass meal prep bowls.

Energy Bites (doubled)
2 C Oatmeal
1 1/3 C unsweetened Shredded Coconut (my favorite is from our local Health Foods store)
I C Peanut Butter
1 C Flax Mill
1 C Cho Chips
2-4 TBSP Chia Seeds
2 TSP Vanilla
2/3- 1 C Honey

Mix all ingredients, then roll into little balls, store in a air-tight container in the fridge for best results.

Lemon Coconut Balls(these never last long at our house- so good!)
6 T coconut Butter (can purchase off amazon or at your local health foods store)
3 TBSP Maple Syrup
1 TBSP lemon Zest
2 TSP lemon Juice
3/4 C Oats
3/4 C unsweetened Shredded Coconut (you know… the Health foods store ;))
1/3 C White choc chips melted (drizzle on the tops of the lemon balls once formed)
Mix ingredients, form into little balls, and drizzle white chocolate over the top (optional, but soooo good)

No Bake Cookies 
3/4 C Honey
1 C Natural Peanut Butter
1/2 C Coconut Oil
2 TSP Vanilla (stir in after first 3 ingredients melt/mesh together)
2 1/4 C Oats (rolled, or quick- Hubby and I have different preferences ;))
6 TBSP Cacao Powder
Mix first 3 ingredients over stove until melded together. Add Vanilla, stir in- then add and stir in the Cacao Powder. Add the rolled oats last, then drop onto a cookie sheet coved with parchment paper. Stick in the fridge to set, and then store in a air-tight container in the fridge for best keeping. These get a little sticky/ messy if left out or not eaten fast enough. Usually, that’s not a problem around here though.
